Last night I made Penne with Goat Cheese from Giada De Laurentiis on the Food Network (I'm a bit obsessed with that channel) and it was fabulous! The original recipe also has butternut squash but I left that out as it was unavailable in my local store last night, bummer. But even without the squash this pasta was perfect with the right combination of sweet crunch from toasted walnuts and creamy bite with the goat cheese. And, the best part, it was very easy to make. Too bad my sad little photo didn't do this dish justice.

Goat cheese and pasta...pure perfection! Love it! Try making a baked mac and cheese with it. AMAZING!
